My kids like lots of yucky, chemical-laden foods that I'd rather not feed them, so I was excited when I found this "recipe" in Real Simple magazine. We will definitely be trying this soon.
Melt 1 tablespoon of coconut oil in the microwave (or over a double boiler), and add 8 ounces of chopped semi-sweet chocolate.
Stir until well-mixed.
Cool it slightly, and then spoon it over your ice cream of choice.
Thanks, Real Simple!
I found/was shared/adapted a recipe for chocolate bars that are not only delicious, but more nutritious than most foods. basically:
you melt down some extra virgin coconut oil.
mix in raw cacao powder (more means more chocolaty)
add a wee bit of stevia
then optional additions include:
raisins, nuts, acai berrys, spirulina, peanut butter dollops, and almost any other awesome food stuff that can blend and be overshadowed by the chocolatey nature of this beast.
pour it into a form (I use the square shallow lids from tea tins), and then pop it in the freezer for an hour (less really).
then just pop out said heathy chocolate bars and store in a container in the fridge, voila, instant candy bars that most folks agree taste just as good as conventional candy with absolutely none of the badness. The only downside is if you take out of fridge and don't eat fairly soon after, the oil does tend to get rather greasy, but if you take out of fridge and eat them with out too much delay there is no downside.
(i personally add all the add ins after pouring the smooth mixture into the forms. Also, it doesn't take much heat to melt the oil, literally one can place the jar in a pot of warm water for a little bit and it turns clear)
candy-tastic indeed!
